  • 4 tbsp butter
  • 3 cups whole milk
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1/2 cup shredded cheddar cheese
  • 1 lb rigatoni pasta
  • 2 tbsp olive oil
  • 1 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • Salt to taste
  • Optional: chopped chives for garnish

Instructions

  1. Cook rigatoni according to package directions until al dente. Drain and set aside.
  2. Toss cubed chicken with olive oil and seasonings until evenly coated.
  3. In a large skillet, heat butter over medium-high heat and cook the seasoned chicken until golden brown. Remove from skillet.
  4. Use the same skillet to sauté minced garlic in remaining butter for about 30 seconds.
  5. Whisk in flour to create a roux, then gradually add milk and chicken broth while stirring continuously until smooth.
  6. Stir in cheeses until melted and combined. Season with salt to taste.
  7. Add cooked rigatoni and chicken to the sauce, tossing gently to coat.
  8. Serve warm, garnished with chopped chives if desired.
