  • 1.5 lbs boneless, skinless chicken thighs
  • 2 tbsp unsalted butter
  • 1 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp ground coriander
  • 1 tsp garam masala
  • 1/2 tsp turmeric
  • 1/2 tsp chili powder (adjust to taste)
  • Fresh coriander leaves for garnish

Instructions

  1. In a large skillet, heat vegetable oil and butter until melted. Add chicken pieces and brown on all sides. Remove and set aside.
  2. In the same skillet, sauté chopped onion until translucent. Add minced garlic and grated ginger; cook until fragrant.
  3. Sprinkle in ground coriander, garam masala, turmeric, and chili powder; toast briefly before returning chicken to the skillet.
  4. Pour in enough broth to cover the chicken, bring to a simmer, then reduce heat to low and cover. Cook until chicken is tender.
  5. Stir in crushed coriander seeds or chopped cilantro just before serving.
