  • 1/2 teaspoon cumin

  • 1 cup diced tomatoes
  • 1/4 cup chopped red onion
  • 1/4 cup chopped cilantro
  • 1 jalapeño, seeded and minced (optional)
  • 1 lime, juiced
  • Salt and pepper to taste
  • 1/4 cup mayonnaise
  • 1 tablespoon chipotle pepper in adobo sauce
  • 1 clove garlic, minced
  • 1/2 teaspoon lime juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup cooked rice
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat your grill to medium-high heat.
  2. Season your chicken or steak with chili powder, cumin, salt, and black pepper.
  3. Place on the grill and cook for 2-3 minutes per side until fully cooked.
  4. In a mixing bowl, combine diced tomatoes, red onion, jalapeño (if using), cilantro, lime juice, salt, and pepper. Toss everything together until well mixed.
  5. In a small bowl, whisk together mayonnaise, chipotle pepper in adobo sauce, minced garlic, lime juice, salt, and black pepper until smooth.
  6. Divide cooked rice among serving bowls.
  7. Top each bowl with grilled chicken or steak.
  8. Add pico de gallo and sprinkle with chopped cilantro.
