  • 1 1/2 cups unsalted butter (melted)
  • 2 1/4 cups granulated sugar
  • 1 1/2 cups light brown sugar (packed)
  • 6 large eggs (room temperature)
  • 3 tbsp vegetable oil
  • 2 tbsp pure vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 1/2 cups cocoa powder
  • 1 1/2 tsps salt
  • 1.5 qts favorite ice cream flavor

Instructions

  1. Preheat oven to 350°F. Grease two 8×8 pans and line with parchment paper.
  2. In a bowl, mix melted butter, granulated sugar, and brown sugar until combined.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in vegetable oil and vanilla extract.
  5. In another bowl, combine flour, cocoa powder, and salt; gradually add to the wet mixture until just combined.
  6. Divide batter between the pans and bake for 30–40 minutes until a toothpick comes out barely clean.
  7. Allow brownies to cool completely before adding softened ice cream on one half.
  8. Top with the second brownie half, wrap tightly, and freeze for at least six hours before slicing.
