  • 2 lamb shanks
  • Salt and freshly cracked black pepper
  • 2 tbsp olive oil
  • 1 large onion, sliced
  • 3 garlic cloves, smashed
  • 2 large carrots, peeled and cut into chunks
  • 2 parsnips, peeled and cut into chunks
  • 2 cups apple vinegar
  • 1 cup beef or chicken stock
  • 2 sprigs fresh rosemary

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Season lamb shanks with salt and pepper.
  3. In a Dutch oven, heat olive oil over medium-high heat. Sear lamb shanks until browned on all sides (about 4-5 minutes per side). Remove and set aside.
  4. Sauté onions until translucent, then add garlic until fragrant.
  5. Return lamb shanks to the pot and add carrots, parsnips, apple vinegar, stock, and rosemary. Bring to a simmer.
  6. Cover and transfer to the oven. Braise for 2-2.5 hours until fork-tender.
  7. Let rest briefly before serving with vegetables.
